From Scratch Oven Roasted Carrots – Recipe Overview
Cooking oven roasted carrots from scratch at home is pretty simple. We’ll start by preparing the carrots – cleaning, peeling, and halving them. While waiting for the oven to warm, we’ll make our glaze and arrange the carrots on a baking sheet before cooking. This recipe only takes 20-30 minutes to cook and is perfect alongside any dish!

The BEST Oven Roasted Carrots
Ingredients
- 1 lb carrot peeled and trimmed
- 2 tablespoons Olive Oil
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon Black Pepper
- 1/2 teaspoon dried thyme or 1 teaspoon of fresh thyme leaves
- 2 cloves Garlic minced (optional)
- Fresh Parsley for garnish (optional)
Instructions
- Preheat oven to 425℉ (220℃)
- Wash and peel 1 lb carrots. If the carrots are thick, cut them in half, lengthwise.
- Combine 2 tablespoons Olive Oil, 2 tablespoons honey, 1 tablespoon balsamic vinegar, 1/2 teaspoon salt, 1/4 teaspoon Black Pepper, 1/2 teaspoon dried thyme, and 2 cloves Garlic, minced in a large bowl. Mix well.
- Arrange the carrots in a single layer on a baking sheet. Drizzle the glaze over until they are evenly coated on all sides.
- Cook for 25-30 minutes or until the carrots are tender.
- Remove from the oven and let cool for 1 min.
- Garnish with Fresh Parsley and serve hot!
