Prepare the Beef:

  • Place the thinly sliced flank steak in a bowl and toss with cornstarch until coated on all sides. Set aside for 10 minutes. This process helps tenderize the beef and give it a nice coating before frying.
    1/4 cup cornstarch, 1 pound flank steak
  • In a small mixing bowl, combine the soy sauce, brown sugar, and water. Stir until the sugar dissolves and set aside.

  • In a large pan or wok, heat the vegetable oil over medium-high heat. Add the beef slices slowly, being sure to not overcrowd the pan. Cook until crispy and brown, about 2-3 minutes per side. Once cooked, remove the beef from the pan and drain excess oil onto paper towels.

  • Pour out excess oil, leaving about 1 tablespoon in the pan. Add the minced garlic and minced ginger to the pan. Cook until fragrant, about 30 seconds. If desired, add red pepper flakes for additional heat.

  • Pour the soy sauce mixture from step 3 into the pan. Bring to a simmer. Let simmer for 2-4 minutes to let the sauce thicken.
  • Add the fried beef back into the sauce. Toss until beef is coated with the sauce, then cook for another minute.

Prepare the Vegetables:

  • Remove the top, core, and base of the bell peppers and slice into thin strips. Thinly slice the carrot into small 1/8th inch sections.

  • Combine the peppers and carrots and season with salt and pepper.

  • In a medium frying pan, add 1 tablespoon of oil. Cook the vegetable mixture until the peppers are soft and tender.

Steam the broccoli:

  • In a small pot, add ½ cup water over medium-high heat.
    1/2 cup water
  • Insert your Steamer Basket into the pot.
  • Add the broccoli and cook, covered, for 4-5 minutes, until broccoli is tender.
    2 cups broccoli
  • Remove the pot from heat and season lightly with salt and pepper.

Serving:

  • Combine the vegetable mixture, broccoli, and beef, and serve over white rice or noodles.

  • Optionally, garnish with green onions.
