For the Salad

Homemade Creamy Dressing


Prepare the Salad

  • Remove the core of 1 head iceberg lettuce and 1 head Romaine Lettuce. Wash the lettuce thoroughly and dry in a salad spinner.
  • Dice the Romaine and Iceberg Lettuce into small, bite sized sections and ensure that the two are evenly mixed. Add to a large salad bowl.

Prepare the Dressing

  • Add 1 egg to a small mixing bowl and mix using immersion blender with a whisk attachment for 20-30 seconds.
  • Add 1 tsp white wine vinegar, 1 tsp white wine vinegar, and ¼ tsp dijon mustard to the bowl and continue mixing.
  • Slowly add 1¼ cup avocado oil in small drops until the mixture begins to thicken and emulsify.
  • Once the mixture begins to thicken, slowly begin adding more oil.
  • Add 2 tbsp lemon juice and continue to mix.
  • Season with salt and Pepper to taste.
  • Measure out 1 cup of the oil mixture and add to a separate bowl. Combine with 2 cloves Garlic, minced, 2 tbsp lemon juice, 1¼ tsp Dijon Mustard, 1 tsp anchovy paste, and 1 tsp Worcestershire Sauce.
  • Continue mixing in the remaining ¼ cup avocado oil until the oil is emulsified.
  • Mix in 1/2 cup parmesan cheese, finely grated.

Prepare the Salad

  • Combine 1/2 cup parmesan cheese and the lettuce from the first section.
  • Drizzle with dressing.
